Saffron is a rare and unique spice prized for its colour, flavour and healing properties. It is a critical ingredient in many Indian, Pakistani, Spanish and Persian cuisines; selected both for its distinct taste and rich colour. It is also a popular ingredient used in medicinal Ayurvedic and traditional Kashmiri treatments; often used in teas, warm milk and hot beverages after a meal and before bed to increase digestions and aid in sleep.

Authentic Kashmiri Mongra saffron has numerous beneficial health effects, including a neuroprotective activity on retinal photoreceptors exposed to oxidative stress, and a resilience against the development of stress-related psychiatric disorders. Multiple results and data sets have been cited in studies and clinical trials with patients affected by either age-related macular degeneration or stress-related psychiatric disorders showing positive results. The chemistry of saffron is complex; this spice has primary metabolites, which are ubiquitous in nature, such as carbohydrates, minerals, fats, vitamins, amino acids, and proteins. A large number of compounds belong to different classes of secondary metabolites, products of metabolism not ubiquitous but important for the development or reproduction of the organism, such as carotenoids, monoterpenes, and flavonoids, including mainly anthocyanins.

Carotenoids are the most important constituents of the spice, from which it derives its color. They include fat-soluble ones, such as α- and β-carotene, lycopene and zeaxanthin, and water-soluble ones like the apocarotenoid crocetin (C20H24O4) and crocins, the polyene esters of the mono- and di-glycoside crocetin.

Saffron is one of the most expensive spices in the world, but high costs lead to a high rate of counterfeiting. Kashmir and India vigilantly protect their organic saffron trade with strict restrictions through the India International Kashmir Saffron Trading Center. This organization ensures the authenticity and purity of Kashmiri saffron and closely monitors the farming practices and harvesting methods within the sanctioned Pampore region of Kashmir. Kashmiri saffron is renowned globally as a spice that rejuvenates health and is used in medicinal purposes, cosmetics and is a part of religious rituals all across India. It has also been associated with traditional Kashmiri cuisine and represents the rich cultural heritage of the region. Geographic indication is a sign on products that have a specific geographical origin and the product has special qualities and reputation. Geographic indication leads to the overall assurance that the saffron is grown and harvested within this historical region and is of the highest quality, authenticity and purity.

The prime purpose of registering a geographic indication is to seek protection for specific products produced in a particular geographic region that encourages the marketers to expand their business at a global level.

Know the Origin

Said to have originated in Kashmir, Persia, and Ancient Greece, the use and cultivation of Saffron spans back over 3,500 years. Widely used for its distinctive flavour, fragrance, colour and medicinal properties, Saffron has throughout history remined one of the most prized spices in the world. While historical accounts differ, Saffron cultivation in Kashmir started between the 6th century BC and 11th century AD. As legend has it, in 11th century BC two Sufi holy men found themselves lost and ill in Kashmir; when the local chieftain provided care and treatment the holy men gave the chieftain a saffron crocus bulb as thanks. Now regarded as saints the Sufi holy men have a golden domed shrine and tomb dedicated to them located in Pampore, Kashmir.
